The Evian spring was discovered in 1789 when the Marquis de Lessert drank water from the Cachat spring above the village of Évian-les-Bains on the southern shore of Lake Geneva in Haute-Savoie. He reportedly noticed health benefits and the spring became known for its therapeutic water.
The town of Évian-les-Bains developed as a spa resort in the nineteenth century, and the commercial bottling of Evian mineral water began in 1826 when the Count of Laizer obtained authorization to distribute the water in bottles. The water became fashionable among European royalty and the wealthy, establishing the premium positioning that defines the brand today.
Evian mineral water undergoes a natural filtration process that takes approximately 15 years as rainwater and snowmelt percolate through glacial layers and mineral sands in the Alps above the town. This slow filtration gives Evian its characteristic low mineral content and neutral taste.
