Siggi Hilmarsson was born in Iceland and moved to New York City to study business. Homesick for the skyr he grew up eating, he began making it in his apartment kitchen using traditional Icelandic recipes and ingredients. After sharing batches with friends who encouraged him to commercialize it, he launched Siggi's in 2006 through farmers' markets and specialty stores.
Skyr is an ancient Icelandic dairy product that predates modern yogurt and is technically classified as a fresh cheese, though its texture and consumption pattern are similar to thick yogurt. It is made by heating milk, adding cultures, straining extensively to remove liquid, and producing a very thick, creamy product. Authentic skyr is high in protein and low in sugar relative to conventional yogurt.
Siggi's grew steadily through natural and specialty food retail before transitioning to mainstream supermarket distribution.
